Develops and submits event over event tip-out reports to Office Manager. Coordinates QSR needs with the Sports Center and Horse Park Event Clients. Coordinates/supervises F&B subcontractors and terminates/recruits as necessary. Directly supervises, (re)trains, mentors and manages the performance of the Concessions Service Manager, Concessions Operations Manager and Concessions Warehouse Manager. Works in tandem with the Catering & Premium Director and Executive Chef to ensure interdepartmental cohesion, clear communication and smooth event execution. Manages and participates in the development and implementation of goals, objectives, policies and priorities of all concessions and bar programs/projects. Directly responsible for labor cost controls and cost of goods sold; forecasts and monitors concessions revenue.
